Spicy Korean Pork Chops With Keto and NSNG Option

One of my absolute favorite recipes is Korean Pork Chops that I make slightly modified from this recipe at Jo Cooks.  I usually make them with pork steak instead of chops, but they are great either way. I like pork steak because its extra fat keeps the meat super juicy. When I started eating lower carb food and cut out sugar and most grains, I had to find a way to modify the recipe. The original uses a lot of soy, which is made with grain, honey (obviously a sugar), and sriracha, which has sugar.  The hardest thing to find a substitute for was the honey. I didn’t mind sacrificing sweetness in the recipe, but the honey was instrumental in creating a nicely sticky glaze.  Fortunately I found a great substitute.  So, with that introduction in mind.  Here is the original recipe. It is then followed by my modified version for no sugar, no grains (NSNG) and Keto with information about my substitutions.

Korean Pork Chops Recipe Standard Version

The standard version of these pork chops use a marinade of soy sauce, honey, minced garlic, sesame oil, fresh ginger, sriracha, and black pepper. I recommend marinating at least two hours and I have gone as long as overnight with it. After marinating, reserve the marinade and pan sear both sides of your chops, about five minutes each side. Use a skillet that you can put in the oven. Cast iron is great for that. I usually use a very affordable lodge cast iron skillet, but I also sometimes use my larger, and more expensive, Le Crueset skillet.

After browning each side, pour the marinade over the chops and pop them in a 400 degree the oven for 15-20 minutes until the marinade caramelizes on the chops. The end result is a tasty spicy, juicy wonder.

Spicy Korean Style Pork Chops
Ingredients
  • 2 large or 4 small pork chops or pork steaks
  • 1 tbsp olive oil
  • ¼ cup soy sauce
  • 2 tbsp honey
  • 6 cloves garlic minced
  • 1 tsp sesame oil
  • 1 tsp fresh ginger minced
  • 2 tsp sriracha sauce
  • black pepper to taste
Instructions
  1. Preheat oven to 400 F degrees.
  2. In a medium size bowl whisk together the soy sauce, honey, garlic, ginger, sesame oil and sriracha sauce.
  3. Pour over pork chops and marinade for at least 2 hours.
  4. Heat the olive oil in a large skillet (cast iron preferred) on medium high heat.
  5. Add pork chops or steak, without marinade, reserve the marinade
  6. Pour the marinade over the chops or steaks and roast for 15-20 minutes until cooked through and the marinade starts to caramelize on the pork.

 

Korean Pork Chops, NSNG and Keto Version

OK, so, now for the NSNG Korean Pork Chops. For these, I made three substitutions to remove the soy, sriracha, and chili paste.

To replace the honey, I used Vita Fiber, which is a tapioca starch syrup. This a sugar-free prebiotic fiber. 1 tsp has  4g carbs and 3.5 grams of fiber for 0.5g net carbs. It has a slightly sweet taste and some people like to use it as a natural sugar and grain-free sweetener, but my purpose for it was to replace the honey with something that would be similarly sticky and caramelize. this worked perfectly. In fact it caramelizes even better than honey.

My standard soy sauce replacement is Coconut Aminos which consists of organic coconut tree sap and sea salt. It tastes pretty much the same as soy sauce and nothing like coconut.

Finally, I used Chili Garlic Sauce instead of sriracha.  Chili Garlic Sauce is nearly the same ingredients minus the sugar and it is chunky instead of blended smooth.

With those modifications, the recipe and the process remains the same as the original.  The outcome was exactly the same. I honestly could not tell any difference in taste between the original version and the new NSNG, Keto version.

NSNG Keto spicy Korean-style pork chops or pork steaks.
Ingredients
  • 2 large or 4 small pork chops or pork steaks
  • 1 tbsp olive oil
  • ¼ cup coconut aminos
  • 2 tbsp Vita Fiber
  • 6 cloves garlic minced
  • 1 tsp sesame oil
  • 1 tsp fresh ginger minced
  • 2 tsp Chili Garlic Sauce
  • black pepper to taste
Instructions
  1. Preheat oven to 400 F degrees.
  2. In a medium size bowl whisk together the coconut aminos, Vita Fiber, garlic, ginger, sesame oil and Chili Garlic Sauce.
  3. Pour over pork chops and marinade for at least 2 hours.
  4. Heat the olive oil in a large skillet (cast iron preferred) on medium high heat.
  5. Add pork chops or steak, without marinade, reserve the marinade
  6. Pour the marinade over the chops or steaks and roast for 15-20 minutes until cooked through and the marinade starts to caramelize on the pork.
