This meatloaf with sausage can be made with a number of combinations of meat. The one here is made as bratwurst meatloaf with ground beef, but I have made it with Italian sausage and breakfast sausage mixed with hamburger too. I like to make it bacon wrapped, but you can make it without the bacon as well.
Meatloaf with Sausage
I found my self with a pantry full of bread crumbs and a freezer full of bratwurst to use up, so I figured a meatloaf with sausage was in order. I also had a ton of canned jalapenos, so I tossed that in too, which turned out to be really good.
I like to combine 1 pound of ground beef with one pound of some sort of pork for this. You can try:
- Bratwurst
- Italian Sausage
- Ground Pork
- Breakfast Sausage
Making a bacon wrapped meatloaf with sausage is an optional step, but that bacon adds oh so much flavor!
Accordingly to the history of meatloaf, you really can make meatloaf with just about any combination of meat. But pork products and beef, particularly hamburger, are the most popular.
Making Bratwurst Meatloaf
Saute up half and onion with some garlic and a bit of Thyme. in a bowl, mix 2 eggs, 1/3 cup milk, 2 T Dijon Mustard, 1 T Worcestershire Sauce, salt, pepper, and parsley with 3/4 cup bread crumbs or crushed crackers.
Next, mix in the onion mix. I also added a small can of jalapeno peppers.
Dig in with your hands and really mix this up! The shape it into loaf on a baking sheet or in a baking dish.
Mix up a sauce of ketchup, Dijon and brown sugar for the top. Then it is time to wrap it!
Bacon Wrapped Meatloaf
Wrap the meatloaf with strips of bacon, tucking the ends under. Also bacon wrap the ends.

Now, pop the whole thing in a 400 degree over of about an hour or until the internal temperature is at least 150 degrees. 165 for no pink.
Let your meatloaf with bratwurst or other sausage cool for about ten minutes before cutting.
Serving Sausage Meatloaf
I served my bacon wiretapped bratwurst meatloaf with sausage with mashed cauliflower and parsnips. It also goes well with mashed potatoes and a roasted pear and asparagus salad.
Bacon Wrapped Meatloaf with Sausage
Ingredients
- For the Sausage Meatloaf
- 1 T Olive Oil
- 1/2 Onion Diced
- 2 T Prepared Minced Garlic (or two cloves fresh, minced)
- 1 t Thyme
- 1 lb Ground Beef
- 1 lb Sausage of choice (I used Bratwurst)
- 2 Eggs
- 1/3 c Milk
- 2 T Dijon Mustard
- 1 T Worcestershire Sauce
- 3/4 c Bread Crumbs
- 1 t Salt
- 1/2 t pepper
- 1 T Parsely
- I small can Diced Jalapeno Peppers or Green Chilies (optional)
- 10 Slices of Bacon
- For the Glaze
- 1/4 c Ketchup
- 2 T Dijon Mustard
- 2 T Brown Sugar
Instructions
- Preheat oven to 400 degrees.
- Saute the onion, garlic and thyme in the oil until the onion is translucent.
- In a medium bowl, mix the remaining meatloaf ingredients except the bacon.
- Add the onion mix and mix thoroughly with hands until well mixed.
- Form into a loaf on a baking sheet or in a baking dish.
- In a small bowl, mix the glaze ingredients.
- Glaze the top of the meatloaf.
- Wrap the meatloaf with bacon, laying strips across the top and tucking them under. Lay a strip across each end.
- Bake for 60 minutes or until internal temperature is a minimum of 150, 165-170 for no pink in the center.
- Let cool ten minutes before serving.
Notes
This puts out a lot of grease from the bacon and sausage, so use a baking sheet with a decent edge or use a baking dish deep enough to hold the grease.
