Warning! These bacon wrapped, chorizo stuffed dates are completely addictive! They have that perfect mix of sweet from the date and savory and salty from the bacon and chorizo. They also are super easy to make. Take them to a party or serve them as an appetizer, and I guarantee they will be a huge hit.
The first time I had these I was floored by them. I sometimes get huge cravings for them. All you need is some bacon, a package or two of pitted dates, chorizo, and some toothpicks.
Cut the bacon into thirds. Open up the dates, stuff them with little balls of chorizo, wrap a third of bacon around each one, and secure with each one with a toothpick. Lay them on a baking sheet and bake at 400 degrees for about 20-25 minutes. You might want to turn them a few times part way through. I usually fiddle with mine a few times while they are baking. Some recipes brush these with maple syrup before baking. I don’t bother since I don’t like to add extra sugar to my food, and these are already plenty sweet from the dates.
Cook these until they are well browned. You want the sugar from the dates to mix with the bacon and caramelize.
Leave the toothpicks in. That way, Each bite size appetizer makes an easy to pick up snack.

- Pitted Dates
- Preheat oven to 400 degrees
- Open up Dates at the seams or cut open with a knife
- Stuff each Date with a small ball of Chorizo
- Wrap ⅓ of a piece of bacon around the Date
- Secure with a Toothpick
- Line Dates up on a baking sheet
- Bake at 400 degrees for 20-25 minutes, turning as needed while baking.
These are technically No Sugar, No Grains (NSNG ) if you don’t count fruit sugar as sugar (some/many NSNG folks do). But they really are not Keto. Dates have a ton of natural sugar. So, I put them on the devilish list. Plus as good as bacon and chorizo are for Keto, they don’t really fall under clean eating for me. So, yep, devilish they are!
