Serves: 4
Ingredients
2 Hass avocados, pitted and peeled
¼ cup plain Greek yogurt (low fat)
2 tablespoons minced jalapenos, or to taste
2 tablespoons minced red onions
2 tablespoons chopped cilantro
5 tablespoons fresh lime juice, divided use
¼ teaspoon kosher salt
Pinch black pepper
2 cups shredded Napa cabbage
2 cups shredded fresh red cabbage
2 tablespoons vegetable oil, plus more for brushing
1½ pounds thick red snapper fillets, skin on
8 flour tortillas, warmed
2 medium tomatoes, thinly sliced (or ½ cup salsa)
Hot pepper sauce, for serving
1 lime, cut into wedges
Instructions
Preheat the broiler to medium high. Spray a broiler pan lightly with cooking spray.
To make the lime guacamole, mash the avocados, yogurt, jalapeƱo, red onion, cilantro, and 3 tablespoons of the lime juice together to make a coarse paste (it should not be extremely smooth). Season the guacamole with half of the salt and pepper. (If made in advance, press a piece of plastic wrap directly onto the surface of the guacamole to keep it bright green.)
To make the slaw, toss together the cabbages with 2 tablespoons oil and the remaining 2 tablespoons of lime juice. Season with pepper. Set aside.
Place the fish on the broiler pan and brush lightly with oil. Season with the remaining salt and a pinch of pepper. Broil until the fish is cooked through and lightly browned, about 10 minutes. Transfer the fish to a platter and pull off the skin. Flake the fish into pieces.
Divide the fish evenly among the tortillas, top with the slaw, guacamole, and tomatoes. Serve at once accompanied with hot sauce and lime wedges.
