Glazed Apple Fritters

- 1 quart vegetable oil (for deep frying)
- 1½ cups flour
- 1 tablespoon white sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- ⅔ cup milk
- 2 eggs, beaten
- 1 tablespoon vegetable oil
- 3 cups apples - peeled, cored and chopped
- 1 cup powdered sugar
- Heat the oil in a deep fryer, dutch oven, or deep skillet to 375 degrees F (190 degrees C)
- In a large bowl, stir together the flour, sugar, baking powder and salt
- Pour in milk, eggs and oil and stir well
- Stir in the apples
- Drop spoonfuls of batter into the oil and fry until golden on both sides (approx. 5 minutes), working in small batches
- Remove with a slotted spoon and drain on paper towels.
- Toss with powdered sugar before cooling to form a glaze.
